NORWAY: FOOD, GLORIOUS FOOD, PART 2- VIKING FEAST

The first time I went to Norway was during the 1994 Lillehammer Winter Olympics.  My client Coca-Cola was a major sponsor of the games including team sponsorship, on site, national and local television and print advertising.    The clients and I went to make sure all went as planned.  Seriously, most of the advertising was already in place and there were only a few last minute hiccups and fire drills to handle.  Most of our time was spent enjoying the Games as well as visiting a number of  local points of interest.

There were two main issues while I was there.  One involved my boots which I will tell in another post. The other was the food which neither  my daughter nor I particularly enjoyed.

Most of the food  was provided by CBS Network TV acting as our Olympics Host as it had sole USA  local and national TV  rights to air the Winter Games.  We not only ate in the       private dining areas provided by the network, but also at restaurants in  various parts of the city.  I  recall finding it difficult to find meals I liked ( I am not much of a meat eater and at that time was also a little leery of fish) . My daughter pretty much vetoed everything and relegated herself to eating lots of Clementine oranges instead of trying to taste “Bambi”  deer or elk or whatever they were serving.  Our best eating memory was sitting in a hidden corner of the hotel eating cheeseburgers and fries and laughing hysterically with my client.

Mea culpa – Norwegian food is outstanding – perhaps I am finally ready to really dig into the delicious food – let’s start with our Viking Feast.

The Viking lunch at Njardarheimr was a most tasty experience with cuisine that  uses ingredients and techniques from the Viking Age,  such as  pit cooking, spit roasting, or smoking, with some foods that can be  dried, salt-cured, or fermented.  Our hearty lunch included  soup, coarse sausage and cabbage salad, freshly baked pan bread,  cured sausage, and grilled fish, chicken  and meat as tons of vegetables:
